WATERMELON, LIME AND RASPBERRY SALT MARGARITA

Ingredients

    Raspberry salt:

    • 30 ml (2 tbsp.) kosher salt
    • 30 to 45 ml (2 to 3 tbsp.) freeze-dried raspberries

    Margarita:

    • 1-1.25 L (4 to 5 cups) chopped watermelon
    • 2 limes, juice and zest
    • Tequila to taste
    • Crushed ice to taste


    Steps

    1 - Place the salt and freeze-dried raspberries in a coffee grinder or mortar and mix/grind until a fine texture is obtained. Set aside.


    2 - Place the watermelon in a blender with lime juice and a little zest, to taste


    3 - Blend until you obtain a fine, smooth texture (like juice.)


    4 - Drink as is or use this mixture for a margarita.


    5 - Put 250 ml (1 cup) of liquid watermelon mixture in a “shaker”. Add a little crushed ice, 2 oz (60 ml) of tequila. and a little lime juice to taste. Close and mix vigorously.


    6 - Take two pretty glasses and dip the rim in the lime juice then in the raspberry salt.


    7 - Add a little of crushed ice in the glasses and pour the watermelon margarita


    8 - Garnish with a lime slice and serve immediately.
