POKÉ BOWL WITH QUINOA

Ingredients
Quinoa
- 250 ml (1 cup) of quinoa dry
- 500 ml (2 cups) of enriched soy drink, flavored with vanilla
Poké bowl
- 15 ml (1 tsp) of vinegar
- 2 eggs
- 1/3 of avocado
- 250 ml (1 cup) of pineapple and carabox (or fruits to taste)
- 125 ml (½ cup) of cottage cheese 1 % M.G.
- 10 ml (2 tbsp) of maple syrup
Steps
1 - In a saucepan, bring the soy drink to a boil. Add the quinoa and cook for 10 minutes. Drain, reserve and let cool.
2 - in another saucepan, bring water to a boil, then Add the vinegar. Gently place the eggs and cook for 3 minutes. Remove the eggs using a spoon with holes.
3 - in each bowl, place 125 ml (1/2 cup) of quinoa cooked, 1 Egg then half of the other toppings. Add a net of maple syrup to each bowl.
