TROUT WITH SEMI-COOKED TOMATOES, GARLIC AND MEDITERRANEAN SPICES

Ingredients
- 1 container (150 g) of cherry tomatoes on the vine
- 2 cloves of garlic, sliced very thin
- 30 ml (2 tbsp.) of olive oil
- 600 g trout fillets
- 15 ml (1 tbsp.) olive oil
- 1 clove of garlic, chopped
- 125 ml (1/2 cup) ) chopped onion
- 375 ml (1 ½ cup) tomato sauce
- 1 Bar to Cook Mediterranean bar
- 60 ml (1/4 cup) mixed olives
- Salt and pepper to taste
Steps
1 Preheat the oven to broil (500°F).
2 Take a baking dish (approximately 8 x 12).
3 Place the cherry tomatoes and garlic slices. Season with salt and pepper. Drizzle with olive oil.
4 Place the pieces of fish on top. Brush with olive oil. Season with salt and pepper.
5 Cook in the oven for 10 minutes . Remove from the oven. Leave to rest for 5 minutes.
6 In a non-stick pan, heat the oil. Add the garlic and onion. Cook for 1-2 minutes.
7 Add the tomato sauce, the Bar to Cook bar and the olives. Bring to the boil. Cook gently for 10 minutes.
8 On a serving plate, place the grilled trout fillets.
9 Garnish nicely with the tomato and olive sauce. Add a bunch of semi-candied tomatoes and garnish with fresh herbs to taste.
10 Serve immediately.
