BLUEBERRY AND COCONUT BANANA BREAD

Ingredients
- 2 ripe bananas
- 2 eggs
- 80 ml (1/3 cup) canola oil
- 250 ml (1 cup) milk
- 5 ml (1 tsp) vanilla extract
- 1 blueberry double bran muffin mix
Toppings:
- 30 ml unsweetened shredded coconut
- A few fresh blueberries
Steps
1 - Preheat oven to 350°F (180°C)
2 - In a bowl, add mashed bananas, eggs, oil, milk and vanilla extract.
3 - Add blueberry and double bran muffin mix.
4 - Mix until smooth.
5 - Line a rectangular pan with parchment paper.
6 - Pour batter into prepared pan. Add fresh blueberries and shredded coconut on top.
7 - Bake in center of oven for about 1 hour or until a skewer inserted in the center of the loaf comes out clean. Serve and enjoy!
