BLUEBERRY AND COCONUT BANANA BREAD

Réinventez la préparation à muffins aux bleuets d'Isabelle Huot : pain aux bananes, bleuets et noix de coco. Un dessert simple et savoureux.

Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 80 ml (1/3 cup) canola oil
  • 250 ml (1 cup) milk
  • 5 ml (1 tsp) vanilla extract
  • 1 blueberry double bran muffin mix

Toppings:

  • 30 ml unsweetened shredded coconut
  • A few fresh blueberries


Steps

1 - Preheat oven to 350°F (180°C)


2 - In a bowl, add mashed bananas, eggs, oil, milk and vanilla extract.


3 - Add blueberry and double bran muffin mix.


4 - Mix until smooth.


5 - Line a rectangular pan with parchment paper.


6 - Pour batter into prepared pan. Add fresh blueberries and shredded coconut on top.


7 - Bake in center of oven for about 1 hour or until a skewer inserted in the center of the loaf comes out clean. Serve and enjoy!
