SWEET POTATO HUMMUS

Ingredients
- 1 large sweet potato (about 200 g), peeled and cut into pieces
- 15 ml (2 tbsp.) tahini
- Juice of 1/2 lemon
- 10 ml (2 tsp.) olive oil
- 1/2 clove of garlic
- 2.5 ml (1/2 tsp.) ground cumin
- 1 ml (1/4 tsp.) of paprika
- 1 pinch of salt
Toppings, to taste
- 15 to 30 ml (1 to 2 tbsp.) water, to adjust the consistency if necessary
- A few toasted sesame seeds
Steps
1 - Steam or boil the sweet potato until tender (about 20 minutes). Drain and let cool slightly.
2 - In a blender or food processor, add the cooked sweet potato, tahini, lemon juice, olive oil, garlic, cumin, paprika and salt.
3 - Blend until smooth and creamy. If hummus is too thick, add one to two tablespoons of water to adjust it to the desired consistency.
4 - Adjust the seasoning if necessary (add more salt, cumin or lemon juice according to your preference).
5 - Pour the hummus into a bowl, garnish with toasted sesame seeds and serve with raw vegetables, pita bread, or as a spread on toast.
