BROCCOLI, ALMOND AND EDAMAME SALAD

Ingredients
Vinaigrette:
- 75 ml (1/3 cup) buttermilk
- 15 ml (1 tbsp.) light mayonnaise
- 15 ml (1 tbsp.) Dijon mustard
- 15 ml (1 tbsp.) maple syrup
- 5 ml (1 tsp.) toasted sesame oil
Salad
- Salt and pepper to taste
- 1 broccoli, cut into small florets, stem peeled and thinly sliced
- 250 ml (1 cup) frozen and thawed edamame beans
- 180 ml (3/4 cup) whole almonds
- 60 ml (1/4 cup) raisins
- 60 ml (1/4 cup) dried cranberries
- 45 ml (3 tbsp.) red onion, finely chopped finely
Steps
1 - In an airtight jar, mix all the vinaigrette ingredients and season with salt and pepper. Set aside.
2 - In a large salad bowl, mix the broccoli florets, edamame beans, almonds, raisins, dried cranberries and red onion.
3 - Add vinaigrette to taste then mix.
4 - Serve and enjoy!
