GENERAL TAO MEAL BOWL

Ingredients
Sauce
- 180 ml (3/4 cup) applesauce
- 60 ml (1/4 cup) reduced sodium chicken broth
- 10 ml (2 tsp) reduced soy sauce in sodium
- 15 ml (1 tbsp.) sweet chili sauce
Chicken toppings
- 5 ml (1 tsp.) sesame oil
- 1 lbs (454 g) chopped chicken
- 1 onion diced
- 30 ml (2 tbsp) grated fresh ginger
- 1 clove garlic chopped
- 1 bell pepper cut diced
- 125 ml (1/2 cup) chopped pineapple, canned, drained
- 2 chopped green onions
Rice:
- Salt and pepper to taste
- 375 ml (1 ½ cups) cooked white or brown rice
Steps
1 - In a bowl, mix all the sauce ingredients. Set aside.
2 - In a non-stick pan, heat the sesame oil.
3 - Add the ground chicken and cook for 3 to 4 minutes. Break up the meat while cooking and season with pepper to taste.
4 - Add the onion, grated ginger and chopped garlic. Add the red pepper. Cook for 1 minute. Deglaze with the reserved sauce mixture.
5 - Add the pineapple pieces.
6 - Add the green onions and mix.
7 - Immediately serve the General Tao style ground chicken over hot cooked white rice.
