CHOCO COTTAGE CHEESECAKE

Ingredients
- 60 ml (¼ cup) 2% m.f. cottage cheese
- 1 ml (¼ tsp) vanilla extract
- A pinch of ground cinnamon
- 5 squares (the half of the bar) 70% dark chocolate
- 30 ml (2 tbsp) oat flour
- 2.5 ml (½ tsp) baking powder
- 10 ml (2 tsp) 4 fruit and chia spread
Steps
1 - In a bowl, whisk the cottage cheese vigorously to remove any clumps (or use a blender for a smooth texture.)
2 - Add the vanilla and cinnamon. Mix.
3 - Cut the chocolate into small chunks. Set a few pieces aside for decoration (step 7).
4 - Add the chocolate pieces, flour and baking powder to the cottage mixture and mix well.
5 - Transfer the mixture to a ramekin or small cup and microwave for 2 minutes or until cooked through (if the container used is deeper than the one shown in the photo, An additional 30 seconds of cooking may be necessary).
6 - Once cooked, let cool to room temperature for 5 minutes
7 - Decorate with the spread and remaining chocolate pieces.
