SALMON ACRAS WITH FROZEN VEGETABLES

Ingredients
- 2 yellow flesh potatoes, peeled
- 250 ml (1 cup) frozen vegetables for spaghetti sauce
- 250 g fresh salmon
- 1/2 onion, chopped finely
- 1 clove of garlic, minced
- 45 ml (3 tbsp.) green shallot, chopped
- 1 egg, beaten
- 125 ml ( 1/2 cup) breadcrumbs
- 30 ml (2 tbsp) fresh parsley, chopped
- 5 ml (1 tsp) Old Bay spices
- Salt and pepper to taste
Steps
1 - Preheat the air fryer to 190°C (390°F)
2 - Place the potatoes in a pot and cover with cold water. Bring to a boil.
3 - Cook 20-25 minutes (or until cooked). Drain. Place in a bowl.
4 - Mash and puree. Season with salt and pepper to taste. Set aside.
5 - Place the frozen vegetables in a pot of boiling water for 15-30 seconds to remove the ice. Drain and chop finely.
6 - Reserve in the bowl with the mashed potatoes.
7 - Put the piece of fish in the basket of the hot air fryer.
8 - Cook for 5 minutes. Take out the fish. Break into flakes.
9 - Put in the bowl with the apples ground and vegetables.
10 - Add the onion, garlic, green shallot, egg, breadcrumbs, parsley and Old Bay spices.
11 - Season with salt and pepper to taste. Mix.
12 - Shape into croquettes and place in the fryer basket hot air.
13 - Bake for 8-12 minutes (until crispy).
14 - Take out of the air fryer.
15 - Serve immediately with lemon wedges. ot
